1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened

Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter.
Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

Makes 5 dozen 3 inch cookies. (I usually make half the recipe)
6 cups flour
3 tsp baking powder
2 cups butter
2 cups sugar
2 eggs
2 tsp vanilla
1 tsp salt
Cream butter and sugar. Add eggs and vanilla. Mix dry ingredients and add a little at a time.
Chill 1-2 hours. Roll and cut into shapes. Bake at 350 degrees F. 8-10 minutes.
Buttermilk biscuits from Kristie Layne
My recipe....3 cups self-rising flower, 3/4 cup lard or Crisco, 1 cup more/less of buttermilk. I don't usually have buttermilk on hand so I take a cup of milk and add a couple tsp of vinegar in it, that will make buttermilk. Anyway, mix the flour and lard in the mixer. I just throw it in my Kitchen Aid and let it mix until the lard is completely mixed in and you have fine granules. Slowly add the buttermilk. Turn on a floured surface and pinch off dough balls and put on greased pan. You can also roll them out and cut them with a biscuit cutter. Bake at 350 until golden brown. I usually bake a few batches, let them cool, throw them in freezer bags, and store them in the freezer. Then when I need some, just pop a few in the microwave for a few seconds. They taste just as fresh as if you had just made them.

Crepes: 1c flour, 1 1/2c milk, 1/4tsalt, 2 eggs, 1t oil. ..... 1/4 cup in sprayed pan over med heat till brown (1min) flip for 30 seconds
Spoon filling onto crepe and roll. Place in pan top with more cheese and bake at 350 for 20-30 mins
Sauce is just a basic Hallandale- 4 egg yolks, 2/3c cream, juice of 1 lemon; cook low heat till thickening then add 1/2 c butter stired in no heat.
Spoon sauce over when ready to serve

Sweet Tomatoes’ Cream of Mushroom Soup

Makes 1 gallon
10 cups sliced mushrooms, 1/4-inch thick (about 2 pounds)
2 cups sliced celery, 1/2-inch thick (about 3 large ribs)
1 stick (4 ounces) plus 5 tablespoons salted butter, divided
1/2 teaspoon white pepper
9 tablespoons all-purpose flour
6 1/2 cups water
2 tablespoons beef base
2 tablespoons chicken base
2 cups whole milk
2 cups half-and-half
Salt and pepper, to taste
In a large saucepan, combine mushrooms, celery, 1 stick butter and pepper. Saute over medium heat for 15 minutes or until vegetables have cooked down and released their juices. Remove from heat and set aside. Do not discard liquid.
While mushrooms and celery are cooking, in a large saucepan, melt remaining 5 tablespoons butter over medium heat and stir in flour. Cook for 1 minute, stirring constantly. Add water in 1/2 cup increments, stirring between each addition to be sure no lumps form. Add beef base and chicken base and bring mixture to a slow boil. Reduce heat and simmer 15 minutes. Soup will thicken. Stir in milk, half-and-half and reserved mushrooms and celery, with their cooking liquid. Season to taste with salt and pepper. Serve hot.

AMISH CINNAMON BREAD
No kneading, you just mix it up and bake it
Batter:
1 cup butter, softened
2 cups sugar
2 eggs
2 cups buttermilk or homemade buttermilk--- 2 cups milk plus 2 tablespoons vinegar or
lemon juice
4 cups flour
2 teaspoons baking soda
Cinnamon/sugar mixture:
2/3 cups sugar
2 teaspoons cinnamon
Cream together butter, 2 cups of sugar, and eggs. Add milk, flour, and baking soda. Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan). Mix in separate
bowl the 2/3 c sugar and cinnamon.
Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan. Add remaining batter to pans; sprinkle with last of cinnamon topping. Swirl with a knife. Bake at 350 degrees for 45-50 min. or until toothpick tester come clean. Cool in pan for 20 minutes before removing from pan. Makes 2 loaves
Chef's Lo Mein recipe: (He used this to demonstrate knife skills)
I medium onion - chopped.
2 carrots - cut on the diagonal in slices.
2 green peppers - julienned
2 zucchini - julienned and diced (1/2 and half)
8 -12 ounces of baby bella mushrooms - sliced
1/4 of a cabbage - (chopped like grass)
2-3 leaves of bok choi - dice the white part and chiffionade the green part
3-5 clove of garlic, minced
fresh ginger - diced (I did a little over a tablespoon)
2 eggs
1 pound spaghetti
Kosher salt
Canola oil
soy sauce
honey
saracha
sesame oil
Prep all veggies first (chef put them all on a baking sheet). I used our wok - on 375 for temp. Medium high heat if using a skillet.
Once heated - add some oil to the pan. Add a pinch of salt with each veggie addition! Add each of the veggies in this order one at a time - Onion, carrot, pepper, zucchini, mushrooms, cabbage, bok choi, then the garlic and ginger until fragrent. Add 2 eggs and toss everything around. Add the cooked spaghetti and separate it. Add soy sauce just until the pasta starts to turn a light brown. Add a little honey (a couple of tablespoons) and mix it. Add a little Saracha (the kids added a few tablespoons before I stopped them from adding more!), toss, then turn off heat and add a little sesame oil.
